Slow Cooker Chicken Reuben Bake

Why should corned beef have a monopoly on all the delicious reuben sandwich fixings? Crock pot chicken breast baked with sauerkraut, Swiss, and thousand island dressing helps bring some diversity to the reuben world.

ingredients

4 boneless skinless chicken breast halves
1 bag (2 pound size) sauerkraut, drained & rinsed
4 slices Swiss cheese
1 1/4 cup Thousand Island salad dressing
2 tablespoons chopped fresh parsley

directions

Place chicken in crock pot. Layer sauerkraut over chicken. Add cheese. Top with salad dressing. Sprinkle with parsley.

Cover and cook on Low 6-8 hours.
