serves/makes:

ready in:
  2-5 hrs

ingredients

4 medium chicken breasts
1 tablespoon brown sugar
1 teaspoon paprika
1 teaspoon chili powder
2 teaspoons salt
1 teaspoon ginger
1/4 teaspoon oregano
non-stick cooking spray
1/4 cup olive oil
1 lime, juiced

Green Chile Sauce

1/4 cup water
8 tomatillos, husks removed
1/2 medium white onion
2 jalapeno peppers
1/4 cup fresh cilantro
3 cloves garlic
1 lime, juiced
salt, to taste

directions

Rub chicken with spice mixture and place in crockpot. Pour olive oil and lime juice over chicken. Cook on LOW for 4-5 hours. With two forks, shred into bite-size pieces. Toss with green chile sauce

For Green Chile Sauce: Slice tomatillos in half, and place in small pot with water and sliced onion. Bring to a boil, reduce heat, and simmer for 10 minutes, or until tomatillos are tender.

Add tomatillo mixture, jalapenos, cilantro, garlic, lime juice, and salt to blender. Blend until smooth. Strain sauce to remove seeds.
