Balsamic And Tomato Roast Chicken With Eggplant

ingredients
1 eggplant
4 boneless skinless chicken breast halves
1 can tomatoes
balsamic vinegar (to taste)
olive oil
2 tablespoons brown sugar
black pepper (to taste)
basil leaves (for garnish)
directions
Mix the tomatoes, balsamic, olive oil, brown sugar, and black pepper all together; set aside.
Cut the eggplant into 4 lengthwise slices. Place in the bottom of a baking tray or casserole dish. Drizzle a little olive oil over the eggplant and season with salt and pepper.
Place the chicken on top of the eggplant (1 slice of eggplant to 1 chicken breast) then pour on the tomato mixture.
Cook in a medium/high (350-375 degrees F) oven for 25-30 minutes.
Garnish with the basil and serve.

This is the easiest eggplant recipe ever, and delicious. The recipe should call for a large (28 oz.) can, which was not specified. Or, I used a 14.5 can of halved tomatoes, plus a 6 oz. can of tomato paste and two cups of water, plus oregano, thyme, and basil, so that there would be plenty of liquid to reduce off while the dish cooks. I first tried this two weeks ago, and have made it three times since. A winner.

A new favorite. Super easy, especially for eggplant! I tried it with a layer of lasagne under eggplant and chopped garlic to tomato mix and it added good flavor and texture. I highly reccomend trying this.

This is delicious! I have never really tried eggplant but wanted it in my diet. This is a great recipe with a hint of sweetness in the eggplant!
