Slow Cooker Rolled Pork Tenderloin And Sweet Potatoes

Stuffed pork loin, sweet potatoes, and gravy all in one slow cooker batch. An apple and cranberry filling gives wonderful flavor to the pork loin and the sauce that ties it all together.

2 tablespoons brown sugar
1/2 teaspoon Caribbean jerk seasoning
3/4 pound pork tenderloin
1 small apple, thinly sliced
2 tablespoons sweetened dried cranberries
1 large dark-orange sweet potato, peeled, cut into 1/2-inch-thick slices
2 tablespoons water
2 teaspoons all-purpose flour

directions

Spray a 3 1/2-quart slow cooker with cooking spray. In small bowl, stir together brown sugar and Caribbean jerk seasoning.

Place pork tenderloin between sheets of waxed paper. Pound until 1/2 inch thick. Sprinkle with 1 teaspoon of the brown sugar mixture. Top evenly with apple slices and cranberries. Starting with one short side, roll up; secure with string.

Place sweet potato slices in slow cooker. Top with pork roll. Sprinkle with remaining brown sugar mixture. Cover and cook on low heat setting 4 to 5 hours.

About 5 minutes before serving, in 1-cup microwavable measuring cup, stir together water and flour. Remove pork to cutting board. Remove sweet potatoes to serving platter. Stir juices from slow cooker into flour mixture. Microwave on High 30 to 60 seconds, stirring once, until mixture boils and thickens slightly. Cut pork into slices; place over sweet potatoes. Pour sauce over top. If desired, add salt and pepper.

    We love this. Use pork boneless chops or steak and put apple slices and cranberries on top of pork. Great.

    Quick, easy prep. Just a real easy delicious slow-cooker recipe. We cooked a little sauerkraut with caraway and onions on the side and it brought it all home.

    The jerk seasoning is what makes this dish special. It cuts the sweetness of the cranberries and brown sugar, leaving their flavor but with a spicy kick. The only problem with this recipe is the cooking time. After 4 hours on low the potatoes were still far too crisp to eat, but the pork was nearly cooked. We turned the crockpot to HIGH temp for the last hour and the pork was done perfectly but the potatoes were still underdone. We'd recommend starting out on HIGH temp for an hour, then cooking on low for 4-5 hours.
