3 tablespoons olive oil, divided
12 ounces pork tenderloin
2 teaspoons pepper seasoning blend mix, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons pepper seasoning blend mix, divided
8 ounces whole fresh white mushrooms, halved if large
8 ounces new potatoes, halved or quartered
1 sweet red bell pepper, chunked
1 medium onion, cut in 8 wedges
Preheat oven to 450 degrees F. Coat a 15 x 12-inch roasting pan with 1 tablespoon of the oil.
Rub pork with 2 teaspoon of the seasoning blend; place in prepared pan. In a large bowl, toss mushrooms, potatoes, bell pepper and onion with remaining 2 tablespoons of oil and the seasoning blend; add to roasting pan in a single layer.
Roast, uncovered, stirring vegetables occasionally, until meat thermometer inserted in the pork registers 160 degrees F and the vegetables are tender, about 20 minutes. Cut pork into thin slices. Serve immediately.

I wasn't sure what the "pepper seasoning blend mix" was supposed to be so I just used seasoned pepper from Lawry's and I used less than called for because it seemed like a lot. One teaspoon with the vegetables was more than enough I thought of the Lawry's but whatever "pepper seasoning blend mix" is might be different. The pork was good and the combination with the vegetables was nice.

Such an easy recipe, yet so tasty! The pepper seasoning adds lots of flavor to both the pork and the veggies. Everything was beautifully done.
