Pesto Fried Rice With Baked Tofu

ingredients
2 teaspoons olive oil
1 1/2 cup carrot matchsticks or shredded carrots
1 cup sliced red onion
1/2 teaspoon red pepper flakes
14 teaspoons salt
2 tablespoons pesto
3 cups cooked rice, at room temperature
1 pound baked tofu (with Italian-style seasonings), cut into 3/4-inch cubes
1 cup frozen peas, thawed
directions
In a large Dutch oven or wok, heat the oil over medium heat. Add the carrots, onion, red pepper flakes and salt, and cook, stirring, until the carrots are crisp-tender, about 5 minutes.
Add the pesto and rice, and toss well. Stir in the tofu and peas, and cook, stirring, until heated through, 1 to 2 minutes.
