Smokey Joe's Cafe BBQ Short Ribs

ingredients
8 pounds beef short ribs
seasoned salt or steak seasoning to taste
1/2 teaspoon coarse ground black pepper
1 large onion, quartered, separated
1 can (10 ounce size) beef consomme
2 cups barbecue sauce (of your favorite brand)
2 tablespoons sweet pickle relish
directions
Preheat oven to 300 degrees F. Sprinkle the ribs generously on all sides with steak seasoning and the pepper.
Place the ribs in a heavy roasting pan. Top with the onion. Pour the consomme around the ribs, being careful not to knock the seasonings off the ribs. Bake, covered, for 2 1/2 hours.
Remove the ribs to a platter; skim the fat from the juices. Remove the beef from the bones, discarding the bones.
Return the beef to the pan. Pour a mixture of the BBQ sauce and pickle relish over the beef.
Bake, covered, for 45 minutes. Remove the cover. Bake for 15 minutes longer.
