Get the most tender short ribs by slow cooking them in a honey-barbecue sauce.
4 pounds beef short ribs
1 large onion, coarsely chopped
1 cup barbecue sauce, any flavor
1/4 cup honey
1/4 cup flour
1 tablespoon prepared mustard
Place the ribs and chopped onion in the crock pot. In a bowl, stir together the barbecue sauce, honey, flour, and mustard until smooth. Pour over the ribs.
Cover the crock pot and cook on low heat for 6 hours or until the ribs are tender. Skim the fat from the sauce if needed before serving.
Serve the ribs with the sauce.

Beef short ribs are my favorite and this is the simplest way to do them. I've tried this recipe with browning the ribs first and don't really notice any difference in texture so don't let anyone tell you have to brown them to have them turn out good (someone told me that - and obviously it's not true).

My first run at doing ribs in a slow cooker... As a Texan, this almost seems like cheating... BUT, on low, for 6 hours and maybe 10 minutes, these ribs were ideally tender and done just right. I added five or six cloves of crushed garlic to the onions and ribs in the slow cooker, and added some dried rosemary and some Adams Reserve Southwest Rub to the BBQ sauce/chili/flour mix. Very tasty, and couldn't be any simpler. I used Head Country Hickory BBQ sauce, which is a favorite of mine.
