ingredients

2 tablespoons shortening
5 pounds short ribs
1 1/2 cup Dr Pepper (not diet)
1 cup ketchup
1/2 cup vinegar
2 teaspoons salt
1/2 teaspoon black pepper
2 teaspoons chili powder
1/4 cup Worcestershire sauce
2 cloves garlic, minced

directions

Preheat the oven to 350 degrees F.

Heat the shortening in a large skillet over medium-high heat. Add the short ribs and cook on all sides, turning frequently, until well browned. Remove the short ribs from the skillet and place in a large baking dish.

In a saucepan, combine the Dr Pepper, ketchup, vinegar, salt, pepper, chili powder, Worcestershire sauce, and garlic. Bring to a boil over medium-high heat, stirring frequently.

Pour the sauce evenly over the ribs. Place the ribs in the oven and bake at 350 degrees F for 2 hours or until tender. Turn the ribs once or twice during the cooking time.

Remove the ribs from the oven and serve hot.

recipe tips

Browning the meat well creates a richer flavor, so don't rush this step.

For a smoky flavor, add a dash of liquid smoke to the sauce.

If you like a bit of heat, you can add cayenne pepper or hot sauce to the sauce mixture.

Serve the ribs with a sprinkle of fresh herbs, like parsley or cilantro.

Taste the sauce before pouring over the ribs and adjust ingredients as needed.

Keep an eye on the ribs while baking to make sure they remain moist; cover them with aluminum foil halfway through if they look dry.

common recipe questions

What cuts of beef can I use besides short ribs?

You can use other braising cuts such as chuck roast or brisket, but keep in mind the cooking time may vary depending on the size and thickness of the meat.

Can I use a different soda instead of Dr Pepper?

You can substitute Dr Pepper with other colas or sodas that have a similar flavor, such as root beer or a flavored soda like cherry cola.

Is the shortening necessary for browning the ribs?

You can substitute it with vegetable oil, canola oil, or any other cooking oil with a high smoke point if you don't have shortening on hand.

How do I know when the short ribs are tender?

Short ribs are tender when the meat has shrunk away from the bones and easily shreds with a fork. This usually occurs after about 2 hours of baking but can vary based on the size of the ribs.

Can I make this recipe in a slow cooker?

You can adapt this recipe for a slow cooker. After browning the ribs, place them in the slow cooker with the sauce and cook on low for 6-8 hours or on high for 3-4 hours.

Can I make this recipe ahead of time?

Cook the short ribs, let them cool, and then store them in the refrigerator for up to 3 days. Reheat gently before serving.

How do I store leftovers?

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Make sure the short ribs are submerged in the sauce to keep them moist.

Can I freeze the ribs?

Yes, allow them to cool completely, then transfer the ribs and sauce to freezer-safe containers. They can last in the freezer for up to 3 months. Thaw overnight before reheating.

How can I thicken the sauce if it's too thin?

If your sauce is too thin, you can create a slurry by mixing cornstarch with a little cold water and stirring it into the sauce while it's simmering. Cook it until thickened to your desired consistency.

How do I reheat leftovers?

Place the ribs in a baking dish covered with foil. Heat in a 350 degrees F oven for 20-30 minutes, or until thoroughly warmed through. You can also reheat them in a microwave-safe dish with a bit of sauce on medium power, checking every minute to avoid overcooking.

tools needed

Large Skillet: For heating the shortening and browning the short ribs on all sides.

Large Baking Dish: To hold the browned short ribs before the sauce is added and for baking them in the oven. The dish should be large enough that the short ribs aren't overly crowded.

Measuring Cups and Spoons: For measuring the ingredients such as the shortening, Dr Pepper, ketchup, salt, pepper, and chili powder.

Saucepan: To combine and heat the sauce made from Dr Pepper, ketchup, vinegar, and seasonings.

Wooden Spoon or Spatula: For stirring the sauce in the saucepan.

Tongs: For turning the short ribs while browning in the skillet and also for turning them during the baking process.

Sharp Knife or Garlic Press: To mince the garlic cloves.

Cutting Board: To provide a stable surface for chopping the garlic if not using a garlic press.

what goes with it?

Cornbread: The slightly sweet and crumbly texture of cornbread absorbs the sauce from the short ribs nicely.

Mashed Potatoes: Creamy mashed potatoes serve as a comforting base that pairs well with the tender, flavorful short ribs.

Baked Beans: The sweet and hearty flavor of baked beans pairs well with the richness of the short ribs.

Garlic Bread: The buttery, garlicky flavor of garlic bread allows for sopping up the delicious sauce from the short ribs.

Chipotle Sauce: A smoky chipotle sauce can provide an additional layer of flavor with some heat, complementing the sweetness of the Dr Pepper with a spicy kick.

Creamy Parmesan Polenta: This creamy polenta serves as a perfect base for the Dr Pepper short ribs. The richness of the polenta balances the bold flavors of the braised ribs, creating a delicious contrast on the plate.

beverage pairings

Wine Pairings
Shiraz: This wine is full-bodied with rich blueberry and blackberry flavors that match the savory short ribs. Look for one that has a hint of spice.

Zinfandel: A bold Zinfandel, with its jammy fruit flavors and peppery undertones, complements the sweetness of the Dr Pepper and ketchup while highlighting the savory elements from the meat. Look for bottles that have a touch of oakiness for added depth.

Malbec: Malbec's dark fruit and smooth tannins work well with the sweet and smoky flavors in the dish. A bottle with notes of plum and cocoa will echo the sauce nicely.

Other Alcohol Pairings
Brown Ale: A slightly sweet brown ale, with its caramel malty notes, goes hand in hand with the glaze from the Dr Pepper and works to balance the savory meat juices. Look for one that has some nuttiness to it.

Barbecue-Style IPA: An IPA that highlights citrus and tropical fruit flavors can bring a refreshing bite to the short ribs, cutting through their richness.

Bourbon: A sweeter bourbon with hints of vanilla and caramel complements the sauce's richness.

Non-Alcoholic Pairings
Sparkling Water: A bubbly sparkling water with a slice of lime can add a refreshing lift to the hearty short ribs.

Pomegranate Juice: Pomegranate juice has a natural tartness that contrasts nicely with the sweet and savory elements of the dish. Choose one that's 100% juice for a richer flavor that pairs well with the meat.

Root Beer: A good root beer brings in a fun, nostalgic touch while its sweetness plays off the Dr Pepper flavor in the dish. Look for a craft brand with lots of bold spices.

    great

  2. Ava REVIEW:

Wonderful recipe! I love short ribs and the dr pepper sauce was divine. Mine wasn't greasy at all - browning them releases a lot of the fat that is often on short ribs (also try to pick really meaty ones). The dr pepper makes a great glaze with the ketchup. It's very tasty and tangy. I've made tons of short ribs recipes but so far, I think this is tops!

  3. Gigi REVIEW:

Although tender, this recipe was very greasy.
