It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Smoked sausage has so much flavor, you only need to give it a small push to turn it into something scrumptious. Peppers, onions, and tomatoes give kielbasa that push it needs. Excellent on rolls or on top of rice.
1 can (28 ounce size) crushed tomatoes
1 medium onion, sliced thin
1 green bell pepper, seeded and cut into strips
1 clove garlic, minced
2 tablespoons Italian seasoning
1 pound smoked kielbasa or other Polish-type sausage
Combine the tomatoes, onion, green pepper, garlic, and Italian seasoning in a large skillet over medium heat. Cook, stirring frequently, until the onions and peppers are soft.
Slice the smoked sausage into 1/2-inch slices and add to the skillet. Cook, stirring occasionally, until the sausage is heated through.
Serve immediately.

Definitely quick and easy. A good way to dress up some store-bought, pre-cooked sausage when you're in the mood for it.

I sauteed the onion, pepper and garlic in oil first then added the italian seasoning and tomatoes and sausage links (not sliced). I only used a 15 ounce can of tomatoes as I didn't want the sausge swimming in sauce. Served the sausage on buns by scooping out with a slotted spoon so we got some of the onion and peppers in there too.

This was a very quick fix dinner. Very tasty too. I served it with quinoa. I'll make it again, for sure!
