Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.
Cheddar Cheese Spoon Bread

ingredients
2 1/4 cups water
1 teaspoon salt
1 cup cornmeal
1/2 teaspoon black pepper
1 tablespoon butter
1 cup milk
4 large eggs, well beaten
1 1/2 cup sharp Cheddar cheese, shredded
3 tablespoons scallions, chopped
directions
Bring the water to a boil in a large saucepan. Add the salt and lower the heat to simmering. Add the cornmeal while stirring with a wire whisk. Continue to cook, stirring constantly, for about 2 minutes or until the mixture is smooth.
Remove from the heat and whisk in the pepper, butter and milk. When the mixture is smooth, add the eggs. Beat with the whisk. Stir in the cheese and scallions.
Pour the mixture into a buttered 2 quart casserole and bake at 400 degrees F for 40 minutes, or until a toothpick inserted into the center comes out clean.
