2 cans (15.5 ounce size) hominy
1/2 pound Velveeta process cheese, cubed
1 can cream of mushroom soup
1 can Rotel tomatoes and green chiles
1 cup crushed corn or tortilla chips

directions

Drain hominy well and put into buttered 2 quart casserole dish. In a pan, combine cubed cheese, soup, and tomatoes and green chiles.

Let heat through until cheese is somewhat melted. Pour over top of the hominy. Sprinkle crushed corn chips over the top. Bake at 350 degrees F for 35 minutes.

I like to use a combination of white and yellow hominy for color, but that is only a personal preference. You can taste for seasoning adjustment, but you probably don't need to add any extra salt or pepper.

Also you could use canned stewed tomatoes in place of the Rotel tomatoes and green chiles And I guess if you just hate Velveeta cheese you could substitute mild cheddar cheese.
