3/4 cup cornmeal
1 teaspoon salt
2 tablespoons vegetable shortening
1 cup boiling water
2 eggs, well beaten
1 cup milk (whole milk or 2%)
2 teaspoons baking powder
Preheat the oven to 350 degrees F. Grease a 8x8 square baking dish.
Combine the cornmeal, salt, and shortening in a heat-proof bowl. While stirring, add the boiling water and mix well until the cornmeal is well mixed.
In another bowl, whisk together the eggs, milk, and baking powder. Whisk the egg mixture into the cornmeal mixture. Pour the spoon bread batter into the prepared baking dish.
Place the dish in the oven and bake at 350 degrees F for 30-40 minutes or until golden brown.
Remove from the oven and serve immediately.
