1/2 flaked coconut
1/4 cup dry bread crumbs
1 cup coconut milk
2 eggs
2 tablespoons butter, melted and cooled
2 tablespoons sugar
1/8 teaspoon salt
directions
Preheat the oven to 350 degrees F. Grease a 9-inch glass pie plate.
Combine the coconut, bread crumbs, coconut milk, eggs, butter, sugar, and salt in a blender. Process until smooth.
Pour the coconut mixture into the greased pie plate. Place it in the oven and bake at 350 degrees F for 1 hour or until set.
Remove the coconut pudding from the oven and let cool on a wire rack until room temperature. Place the pudding in the refrigerator and chill. Serve the Jamaican coconut pudding chilled.
