Steaks are coated with a herb and olive oil mixture and served with colorful grilled bell pepper rings.
Steaks
2 beef top loin steaks, cut 1 1/2 inches thick, excess fat trimmed
1/4 cup olive oil
1/2 cup snipped fresh parsley
1/4 cup snipped fresh basil
1 tablespoon snipped fresh oregano
1/2 teaspoon salt
2 teaspoons cracked black pepper
Pepper Rings
2 medium red or yellow bell peppers, seeded and cut into 1/2-inch rings
1 tablespoon olive oil
salt and pepper
Place the steaks on a platter.
Combine the olive oil, parsley, basil, oregano, salt, and pepper in a bowl and mix well. Rub half of the mixture on all sides of the steaks.
Cover the steaks with plastic wrap and refrigerate for 1-3 hours.
Preheat the grill to medium-high heat.
Place the bell pepper rings in a bowl and toss with the olive oil. Sprinkle with salt and pepper.
Place the steaks on the grill and cook, uncovered, for 7 minutes. Turn the steaks over and continue cooking until desired doneness.
Place the bell pepper rings on the grill.
Cook the steaks and peppers for 8 additional minutes for medium-rare steaks (or longer for medium).
Remove the steaks and peppers from the grill. Cover and let sit for 10 minutes before serving. Serve the steaks with the peppers.

The fresh herb rub is nice and doesn't overpower the natural steak flavors and the peppers are easy to make
