1 teaspoon coarse salt
1/2 tablespoon coarsely ground black pepper
1/2 tablespoon garlic powder
3/4 tablespoon dried rosemary
1 cup butter
4 (6 ounces each) steaks about 1 inch thick
Combine the salt, black pepper, garlic powder, and rosemary in a spice grinder. Process until the seasoning mixture is a fine powder.
Melt the butter in a small saucepan over low heat. Stir in the seasoning mixture. Remove the pan from the heat and set aside.
Poke the steaks on both sides with a wide-tined fork. Combine the steaks and butter mixture in a shallow dish and turn the steaks to coat well on all sides.
Heat a heavy skillet over medium-high heat. Remove the steaks from the butter and let any excess drip off. Add the steaks to the skillet and cook for 2 minutes per side. Add the butter mixture to the skillet and reduce the heat to medium. Cook the steaks until desired doneness. Serve the steaks hot, drizzled with the butter sauce from the skillet.
