Bistro Steak With Shallots and Balsamic Vinegar

ingredients
1 1/2 pound steak, cut into serving pieces
1 pinch salt and pepper
2 large shallots, minced
2/3 cup balsamic vinegar
2 tablespoons unsalted butter
directions
Heat a large saute pan over high heat. Season steaks with salt and pepper; add to pan. Sear 2 to 3 minutes, depending on desired doneness. Flip steaks, and sear other side 2 to 3 minutes more. Transfer steaks to serving plates.
Add shallots to hot pan and reduce heat to low. Stir, scraping the brown bits from the pan, about 1 minute. Pour in the vinegar; bring to a boil and reduce liquid by half.
Remove pan from heat and stir in butter to melt. Pour over steaks and serve immediately.
