When life hands you chilly days, it's time to whip up something comforting and nourishing. Meet your new culinary companion: beef and brown rice soup that cooks itself while you kick back and relax.

2-5 hrs
ingredients
1 large onion, chopped
20 baby carrots
1 pound beef stew meat, cut in 1/2-inch cubes
2 teaspoons Italian seasoning
2 teaspoons garlic, minced
1 cup long-grain brown rice, uncooked
2 cans (15 ounce size) fat-free beef broth
4 cups water
1 can (15 ounce size) diced tomatoes, undrained
salt and pepper, to taste
directions
Place the onion and carrots in the bottom of the crock pot. Top with the cubed beef.
Sprinkle the Italian seasoning and minced garlic evenly over the beef.
Add the rice, sprinkling it evenly in the crock pot. Gently pour the broth, water, and tomatoes over the rice. Do not stir. You can press the rice down into the liquid with the back of a spoon if it isn't covered in liquid.
Cover the crock pot and cook on low heat for 4-5 hours or until the beef is tender and the rice is cooked.
Adjust seasoning as needed with salt and pepper. Stir well and serve in individual soup bowls.
crock pot notes
Crock pots/slow cookers all heat differently. There is no standard among manufacturers. Cooking times are suggested guidelines based on our testing. Please adjust cooking times and temps to work with your brand and model of slow cooker.recipe tips
Use quality beef for better flavor, preferably grass-fed beef if available.
Try marinating the beef in the broth mixture overnight for more flavor.
For a kick, add a splash of hot sauce or a sprinkle of crushed red pepper flakes before serving.
Add fresh herbs like parsley or cilantro as a garnish.
For a heartier meal, serve the soup over a scoop of additional cooked brown rice or a side of whole grain bread.
Experiment with spices by adding cumin or smoked paprika for a different flavor.
Avoid stirring the soup until the end to keep the rice intact during cooking.
Pre-cooked rice can be used, just add it during the last 30-60 minutes so it can absorb the flavors.
common recipe questions
What kind of beef is best for beef and brown rice soup?
Chuck roast or any other cut suitable for slow cooking, such as brisket or round, works best as these cuts become tender during long cooking times.
Can I use white rice instead of brown rice?
Long-grain white rice can be used. It will cook in less time, so adjust the cooking time as needed.
Can I substitute the beef broth with another type of broth?
You can use chicken broth or vegetable broth if you prefer, though the flavor will change.
What if I don't have Italian seasoning?
You can make your own Italian mix with dried herbs like basil, oregano, thyme, and rosemary, or use just oregano or thyme as a substitute.
Is it necessary to use diced tomatoes?
Diced tomatoes add flavor and acidity to the soup, but if you prefer, you can omit them or substitute with another vegetable like bell peppers. Just make sure to add additional liquid to make up for the juice in the canned tomatoes.
How do I know when the beef is tender?
The beef is tender when it can easily be broken apart with a fork; it typically takes about 4 hours on low heat in the slow cooker. Exact time will vary by slow cooker models, the size of the beef cubes, and the cut of meat.
Can I add more vegetables to the beef and brown rice soup?
Vegetables such as bell peppers, potatoes, or green beans will add flavor and nutrition; just ensure they are cut into uniform pieces for even cooking and adjust the cooking time if needed.
What if I want a thicker soup?
For a thicker consistency, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) towards the end of cooking and allow it to thicken.
How should I store leftovers?
Cool the soup completely, then store in an airtight container in the refrigerator for up to 3-4 days.
Can I freeze this soup?
Yes, this soup freezes well. Allow it to cool, then freeze in portions for up to 3 months, keeping in mind that the texture of the rice may change slightly upon reheating.
How do I reheat the soup?
Reheat in a saucepan over medium heat or in the microwave until warmed through, adding a bit of water if the soup is too thick.
Can this recipe be made on the stovetop instead?
You can cook it on the stovetop in a large pot. Saute the onion and carrots first, then add the beef and brown briefly before adding the broth, water, tomatoes, and rice. Simmer on low for about 1.5 hours or until the beef is tender.
tools needed
Crock Pot: For slow cooking the soup, allowing the flavors to meld together over an extended period.
Measuring Cups and Spoons: For measuring the Italian seasoning, garlic, brown rice, and water.

Sharp Knife: Used for chopping the onion and cutting the beef stew meat into cubes.
Wooden Spoon or Silicone Spatula: For gently mixing the ingredients together before serving.
Ladle (optional): Helpful for serving the soup from the crock pot.
what goes with it?
Crusty Bread: Serve slices of fresh, crusty bread alongside the soup to soak up the flavorful broth.
Parmesan Cheese: Grate some Parmesan over the top of the soup before serving. Its salty, nutty flavor enhances the overall taste.
Herbed Oil Drizzle: Create a drizzle of olive oil infused with fresh herbs like rosemary and thyme and add it just before serving.
Garden Salad: A simple garden salad with a vinaigrette can serve as a light, refreshing contrast to the hearty soup.
Pickled Jalapenos: Adding pickled jalapenos as a topping can introduce a tangy heat that contrasts nicely with the soup's depth.
Avocado Slices: Fresh avocado slices provide a creamy texture that pairs well with the soup's richness. Their mild flavor also helps to mellow any robust spices.
Grated Ginger: A sprinkle of fresh grated ginger can add a warm, zesty note that enhances the overall flavor.

Cheesy Herb Biscuits: Serve warm, cheesy herb biscuits as a side. The richness of the biscuit complements the soup.
beverage pairings
Wine Pairings
Merlot: This soft and fruity red wine with plummy flavors can really complement the hearty richness of the beef in your soup. Look for one without too much tannin.
Cabernet Sauvignon: A fuller-bodied option, Cabernet because of its bold profile and notes of dark fruits, can stand up to the beef stew meat. Aim for one that has rich blackberry aromas.
Chardonnay: Opt for a lightly oaked Chardonnay with buttery and apple notes. It can provide a refreshing acidity to balance out the flavors in the beef and brown rice soup.
Other Alcohol Pairings
Red Ale: A moderately hoppy red ale with caramel and toasty malt flavors will go nicely alongside the beef.
Beefy Stout: A regular stout infused with flavors like chocolate and coffee can add an interesting twist that complements the beef and adds depth.
Whiskey: A smooth whiskey with notes of caramel and vanilla could make for a perfect pairing after a hearty bowl of soup.
Non-Alcoholic Pairings
Herbal Tea: A warm mix like chamomile or mint can add a gentle herbal note that won't overpower the savory flavors of your beef and rice.
Vegetable Juice: Going for a mild vegetable juice, maybe a mix of tomato and carrot, can bring an earthy note to the meal that ties in nicely with the soup's ingredients.
Spiced Apple Cider: A warm spiced apple cider offers sweetness and warmth that can match the comforting flavors of your dish.
