This microwave broccoli casserole is an easy and delicious way to enjoy broccoli. Broccoli is microwaved and coated in a creamy mushroom-cheese sauce and topped with crisp cracker crumbs.

2 packages (10 ounce size) frozen broccoli, florets or chopped
2 tablespoons water
1 can (8 ounce size) pearl onions, drained
1/4 cup cracker crumbs
1 can (10.5 ounce size) cream of mushroom soup, undiluted
1/3 cup shredded Cheddar cheese
1/3 cup shredded Monterey jack cheese

directions

Combine the broccoli and water in a 2-quart microwave safe baking dish. Cook the broccoli on high heat for 10 minutes. Drain well.

Add the pearl onions and cream of mushroom soup to the broccoli. Mix well.

Sprinkle the top of the broccoli mixture with the cracker crumbs.

Place the broccoli in the microwave and cook on high heat for 7 minutes.

Evenly sprinkle the Cheddar and Monterey Jack cheeses over the crumbs. Microwave the broccoli casserole for 1 minute on high heat or until the cheese is melted.

Serve the broccoli casserole hot.

    I use milk instead of mixed w mushroom soup 1 can . I use bread crumbs on the bottom and melted butter for a crust. I put corn flakes on top after cooking then add cheddar cheese melt it then serve after slightly cooked. Yum Yum.
