Slow Cooker Broccoli Potato Casserole

ingredients
20 ounces frozen broccoli spears, thawed
1 can cream of celery soup
1 1/4 cup grated sharp Cheddar cheese
1/4 cup minced green onion
1 cup cubed potatoes
1 cup crushed saltine crackers
directions
In large bowl, combine broccoli, soup, 1 cup of the grated cheese and the minced onion. Pour into lightly greased crock pot. Add potatoes. Stir gently.
Sprinkle top with crushed crackers, then top with remaining cheese. Cover and cook on low for 5-6 hours or high for 2 1/2 to 3 hours.

I made this as a side to ribs. This is so good, I would eat it by itself! Or maybe add some chicken chunks. Reminds me of a thick version of broccoli cheddar soup. I made mine with cream of mushroom. Thanks so much!
