ingredients
3 tablespoons butter
1/2 cup onion, chopped
1 green bell pepper, diced
4 cups fresh or frozen corn kernels
1/4 cup water
1 tablespoon honey
1 teaspoon salt
fresh ground black pepper
2 tablespoons pimiento, chopped
1/2 cup cheese, grated (optional)
directions
In a medium skillet, melt butter. Add onion and green pepper. Cook over medium heat until tender.
Add corn, water, honey, salt, pepper and pimiento. Cover and cook over low heat until the corn is tender-crisp. Top with grated cheese.
