ingredients

2 cups corn (frozen, canned, or cooked from fresh)
1/2 teaspoon salt
1 tablespoon butter
1/2 cup coconut milk
1 cup shredded fresh coconut

directions

Combine the corn, salt, butter, coconut milk, and shredded coconut in a saucepan over medium heat. Cook until just heated through.

Serve hot.
