1/2 cup margarine, melted and cooled
2 eggs, beaten
1 small box cornbread mix (Jiffy)
8 ounces sour cream
1 can (15 ounce size) whole kernel corn, undrained
1 can (15 ounce size) cream-style corn
salt and pepper, to taste
Preheat the oven to 350 degrees F. Grease a 1 1/2 quart baking dish.
In a bowl, stir together the melted margarine, eggs, cornbread mix, sour cream, whole kernel corn, and cream-style corn. Mix well. Add salt and pepper as desired and mix again.
Transfer the mixture to the prepared baking dish. Place in the oven and bake at 350 degrees F for 45 minutes or until cooked in the middle.
Remove from the oven and let stand for 5 minutes before slicing and serving.

I never buy Margarine,can this be made with butter?

This is a recipe I used to make all the time and recently have resurrected it. I use Greek yogurt instead of sour cream. So delicious and easy to make. Everyone loves it.
This was made by my daughter at Christmas - it was delicious. Nothing to add or change - it is so good. We made it again 3x since Christmas. Yum!

This dish was amazing, very creamy, but a nice crunch for the top. very very easy to make. I made this for thanksgiving at my sister's dinner. and then for our own family's dinner the next day. thank you
