Say hello to elote, the Mexican street food that's about to be your favorite way to make corn on the cob! Whole ears are grilled and rubbed with mayo, cheese, and chili powder.

4 ears corn, husks and silk removed
1/4 cup melted butter
1/4 cup mayonnaise
1/2 cup grated cotija cheese (or Parmesan cheese)
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
4 wedges lime (optional)
Preheat an outdoor grill to medium-high heat.
Place the corn on the grill and grill until heated through and lightly charred all over, about 10-12 minutes.
Remove the corn from the grill and roll them in the melted butter. Spread the corn evenly with the mayonnaise. Sprinkle with cotija cheese, chili powder, and cumin and serve with a lime wedge.
