Mandy's Corn Curry Recipe

Ingredients:
3 tablespoons butter
2 cups cut fresh, frozen or canned whole kernel corn, drained
2 tablespoons chopped green pepper
2 tablespoons chopped onion
1/2 teaspoon curry powder
1/2 cup dairy sour cream
salt and pepper
Directions:
Melt butter in a skillet. Add vegetables (if using canned corn, wait to add it with the sour cream) and curry. Cover and cook over low heat until vegetables are tender, 8 to 10 minutes.
Stir in sour cream (add canned corn now if using) and season to taste. Heat, stirring constantly.
