Sweet and creamy baked corn goodness mixed with Jiffy cornbread, perfect for any family dinner. Ready in just an hour, this dish is pure comfort.
1 cup cream-style corn
1 cup drained whole kernel corn
1 beaten egg
1/2 cup melted butter
1 carton (8 ounce size) sour cream
1 box Jiffy cornbread mix
Preheat the oven to 350 degrees F. Grease a 9x13-inch baking dish.
Combine all the ingredients in a bowl and mix well. Pour the corn mixture into the greased baking dish.
Place the baking dish in the oven and bake at 350 degrees F for 45-60 minutes, or until the corn is set in the middle.
Serve the scalloped corn hot.

Try adding cooked bacon or ham for a savory twist on this sweet dish.
Make it a complete meal by stirring in cooked diced chicken or sausage before baking.
For a golden brown crust, increase the oven temperature slightly or broil the dish for a few minutes at the end of baking.
To make it more indulgent, top with a drizzle of melted butter before serving.

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven or microwave before serving.
You can freeze scalloped corn in a freezer-safe container for up to 2-3 months. Thaw in the refrigerator before reheating.
Add in some diced jalapenos or a pinch of paprika, or mix in some shredded cheese for extra richness.
Mixing Bowl: essential for combining the cream-style corn, whole kernel corn, beaten egg, melted butter, sour cream, and Jiffy cornbread mix. Make sure it's big enough to prevent corn mixture from spilling everywhere because then you'll have a kernel of a mess to clean up.
9x13-inch Baking Dish: For baking the scalloped corn mixture in the oven. Greasing the baking dish is important to prevent sticking.
Mixing Spoon: handy for, well, you guessed it, mixing the ingredients in the bowl. Don't worry, it's not rocket science, just give it a good stir until everything is well combined.
Roasted Chicken: this dish will add a nice contrast in texture and flavor to the creamy corn. The crispy skin and tender chicken meat will create a delicious pairing with the rich and sweet corn dish.
Crispy fried bacon: because everything is better with bacon, right? The salty and smoky flavor of the bacon will complement the sweet and creamy corn, creating a satisfying combination of flavors. Just stir in some cooked and crumbled before baking.
Pork Tenderloin: the creamy sweetness of the scalloped corn will balance out the savory, garlicky flavors of the pork for a satisfying meal.
Crispy Parmesan Chicken: the crispy coating of the chicken will add a textural element to your meal and pair perfectly with the creamy corn.
Green Bean Almondine: the crunch of the almonds and freshness of the green beans will provide a nice contrast to the rich and comforting scalloped corn.

This recipe is similar to my Mother's recipe. Don't know where she got it as she had all of her recipes in her head. I am going to try this recipe and modify it by adding a couple of items from my Mother's recipe. I will re-review it after I try it. Don't worry, I am not replacing anything, just adding two items I love that are not in this recipe.

This recipe is fabulous. I've been making it for family and friends for 4 years. My family has to have it for Thanksgiving and Christmas. I also make it when we have company for dinner. The other night, a Thai missionary came for dinner and loved it! My brother-in-law puts maple syrup on it!

My husband made this to take to Thanksgiving dinner. I found the recipe on your site and it sounded good. It exceeded all my expectations! Everyone asked for the recipe and several people had seconds. It was really a hit and that is what we will be bringing to Christmas dinner also. Thanks for a great recipe, Dodi

I am the first to admit that I am not a cook! This recipe is simple and easy to make. I made it at Thanksgiving and Christmas this past year and everyone loved it. I am making as a side to a taco bar. It is the best scalloped corn recipe.
