Two Southern favorites come together in this recipe: pimento cheese and deviled eggs.
6 hard-boiled eggs, peeled
0.33 cup finely shredded Cheddar cheese
2 tablespoons mayonnaise
1 tablespoon pimentos, drained and chopped
2 teaspoons Dijon mustard
2 teaspoons finely chopped onion
1/2 teaspoon minced garlic
1 dash cayenne pepper, or paprika
salt and pepper, to taste
chopped pimentos for garnish
Carefully slice the hard-boiled eggs in half. Remove the egg yolks and place them in a bowl. Set the egg whites aside.
Add the Cheddar cheese, mayonnaise, pimentos, mustard, onion, garlic, and cayenne pepper to the bowl. Mix well. Season as desired with salt and pepper. If the mixture seems dry you can add more mayonnaise.
Spoon the pimento cheese mixture into each of the reserved egg white halves. Garnish with chopped pimentos and serve, or chill until serving time.

The pimento cheese portion of the recipe is a pretty standard one so if you have your own favorite you should be able to easily adapt it to this recipe. Very good flavor and the mixture piped nicely into the egg whites.
