These deviled eggs are spiced up with jalapenos, cumin, and cayenne. They have a tasty bite to them without being overpowering.


12 hard-boiled eggs, shelled
1/4 cup mayonnaise
1 jalapeno pepper, seeded and minced
1 tablespoon ground cumin
1 tablespoon prepared mustard
1 teaspoon cayenne pepper
1/4 teaspoon salt
paprika or Cajun seasoning for extra heat
Slice the hard-boiled eggs in half, lengthwise, using a sharp knife. Carefully remove the yolks from the whites. Place the egg whites in a platter or deviled egg tray. Place the yolks in a bowl.
Add the mayonnaise, jalapeno, cumin, mustard, cayenne pepper, and salt to the egg yolks. Mash well with a fork until all the ingredients are combined. Add additional mayonnaise if the filling seems dry.
Spoon the egg yolk mixture into the egg whites (alternately, you can use a pastry bag and pipe the filling into them). Sprinkle the eggs with the paprika.
Serve the Cajun deviled eggs immediately or chill in the refrigerator until ready to serve.

Many "themed" deviled eggs just taste like deviled eggs to me. But the amount of jalapeno and cayenne added made these very distinct! Although I'm not sure if jalapeno chilies are very characteristic of "Cajun" cuisine.
