ingredients
6 tablespoons butter 12 ounces bittersweet chocolate, coarsely chopped or use chips 2 large eggs 1 cup sugar 2 teaspoons vanilla extract 2 teaspoons ground cinnamon 1 teaspoon chipotle chili powder 1/4 teaspoon cayenne pepper 8 tablespoons all-purpose flour 1 cup chopped walnuts
directions
Preheat the oven to 325 degrees F. Grease and flour a 9x9-inch baking dish.
Melt the butter in a saucepan over medium-low heat. Add the chocolate chips and cook, stirring frequently, until the chocolate has melted. Remove the pan from the heat and let the chocolate cool a little.
In a mixing bowl, bet the eggs, sugar, vanilla, cinnamon, chipotle powder, and cayenne pepper with an electric mixer on medium speed.
With the mixer running, add the cooled chocolate and mix until incorporated. With the mixer running, add the flour. Stir the nuts in by hand.
Transfer the brownie batter to the prepared baking dish. Place the dish in the oven and bake at 325 degrees F for 35 minutes. Test for doneness by inserting a toothpick in the middle. It should come out with moist crumbs.
Remove the pan from the oven and let the brownies cool before slicing. Store the cooled brownies in an airtight container.
The brownies turned out very well. Nice crumb to them. Not overly fudgy but not dry either. The chipotle was just the right amount to balance the sweet but not offend. Next time I'm going to stir in some crisp cooked bacon and see how that goes!

I love the combination of heat with chocolate and these brownies did not disappoint. The chipotle and cayenne aren't so strong that the overwhelm the chocolate flavors but the heat is definitely there. My recommendation is to serve them with some vanilla bean ice cream for optimal results!
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
