It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Classic rich and chewy brownies. Recipe can easily be doubled and leftovers freeze great.
2 ounces Baker's unsweetened chocolate, coarsely chopped
1/3 cup shortening
2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs
1 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup chopped nuts
Preheat the oven to 350 degrees F. Grease a 8x8-inch baking dish.
Combine the chocolate and shortening in the top of a double boiler over simmering, not boiling, water. Stir until melted. Turn off the heat.
In a small bowl, combine the flour, baking powder, and salt.
In a mixing bowl, beat together the eggs and sugar with the mixer on medium speed. With the mixer running, add the melted chocolate and vanilla. Slowly add the flour mixture and continue to mix until combined. Stir in the nuts by hand.
Transfer the brownie batter to the prepared baking dish. Place in the oven and bake at 350 degrees F for 25 minutes.
Remove the pan from the oven and let the brownies cool in the pan. Cut into squares.
If doubling the recipe, use a 9x13 baking dish and bake for 25-30 minutes.

I thought they were a little dry but overall ok. Maybe I baked them too long or something since the other reviews seem to all be positive.

I doubled the recipe and it turned out very good. I used pecans for the nuts beause that's what I had but next time I'll use walnuts. The brownies were very nice and moist. I recommend this recipe.
