2 cups sugar
2 eggs
3/4 cup oil
3 teaspoons vanilla extract
2 cups mashed ripe banana
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1 cup chopped nuts, such as walnuts or pecans
Preheat the oven to 350 degrees F. Grease and flour 2 loaf pans.
In a bowl, beat the sugar, eggs, oil, vanilla, and banana until smooth.
In another bowl, sift together the flour, baking powder, baking soda, salt, and cinnamon.
While stirring, add the flour mixture to the egg mixture. Stir in the nuts.
Divide the batter evenly between the loaf pans. Place in the oven and bake at 350 degrees F for 45-50 minutes or until done in the middle.
Remove the pans from the oven and let the banana bread cool in the pans for 10 minutes then remove the bread from the pans and let cool completely on a wire rack before slicing. Store the bread in an airtight container. The bread can also be frozen.

OK...So I forgot to add the sugar and I am a very experienced cook and baker. But, it tasted great...I whipped up a butter cream/cinnamon frosting to make up for the missing sugar. I will definitely make this again with the sugar this time!!! Delish!

I like this bread very much but it is too sweet put less sugar about 1 1/4 cup. This is a keeper very moist, I also added some walnut and pecan and coconut and sprinkle oats on top.
Over the years I've tried every banana bread out there but this one is the best - even my husband says so. Next time I'd coat the loaf pans with a cinnamon and sugar mix.

This banana bread tasted wonderful but every time I made it, it wouldn't rise. I don't know if I mixed it too much, but other than the fact that it came out flat it was wonderful.

We made this recipe as mini muffins and they were yummy! Easily the best banana bread recipe I have tried.

Very easy to make, but if you plan to cut the recipe in half to make only one loaf it is very small. Next time I would bake it all in one loaf, very tasty though.

This is the best banana bread I've had! It is so moist with great texture. The only difference is I added a 1/4 tsp of nutmeg and decrease the cinnamon by 1/4 tsp. YUMMY!
