And, the award goes to... Banana Bread! Can't you already smell that delicious scent in your kitchen? The warm, sweet sensation of bananas, walnuts, vanilla and sugar rising to perfection in your oven.
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1/2 cup safflower oil
1 cup white sugar
2 large eggs, well beaten
1 1/2 cup mashed ripe bananas
1 cup chopped walnuts
1 teaspoon vanilla extract
Sift together flour, baking powder, baking soda and salt. Mix well.
Cream together oil, sugar, eggs. Add mashed bananas to creamed mixture. Add vanilla. Mix flour and banana mixture together. Stir in walnuts.
Pour into greased loaf tins. Bake at 350 degrees F for 1 to 1 1/4 hours until done.

I haven't made it yet, but.... it makes "24" loaves? Â I'm assuming prepare TWO loaf pans and ignore the four? Will report back when made.... Â :/
