1 cup sugar 1/2 cup butter (softened, at least at room temperature) 2 eggs 3 mashed bananas (make sure they're good and ripe!) 1 1/2 cup flour 1 teaspoon baking soda 1 teaspoon natural vanilla extract (scant) 3/4 cup nut meats (optional) OR 3/4 cup chocolate chips (optional)
directions
Preheat oven to 350 degrees F.
Cream sugar and butter, and then add the rest of the ingredients, mixing very well. Place batter in a buttered 2 quart loaf pan, and bake for one hour.
The version with chocolate chips is out of this world!

I looked for a recipe because the one I as using was too dry. This recipe came out great! Moist on the inside and crispy on the top. Based on the above comments, I used 2/3 cup of brown sugar, and on my own, half the flour substituted whole wheat, and added a tablespoon of ground flaxseed just to get a little more fiber. It's delicious and had to make another one because the kids loved it!

The directions were easy for me to follow. I am not an experienced baker nor a good cook but this is the best bread I have ever baked. The bread came out perfect except that for my oven, I have adjusted the baking time to 55 minutes at 325 instead of the 60 minutes.

Thoroughly enjoyed this recipe. At first I thought it was too sweet, but found that after it sat for a day, the sweetness mellowed out. Very easy to make. I used whole wheat flour instead of white all purpose flour and Splenda. The texture was fine. (Maybe the Splenda gave it the overly sweet taste?) I will also try it with 1/2 cup less sugar or Splenda to see if there's a noticeable difference in the sweetness. I even baked it in a convection oven in a loaf pan at 325 degrees for 35-40 minutes. Easy to follow baking instructions and cook time was perfect. I always place lovely walnut halves on the top of as well as inside the dough prior to baking which is attractive. Great recipe.
