1 cup mashed banana
1 cup sugar
3/4 cup salad oil
2 eggs
2 cups flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup finely grated carrots
1/2 cup chopped nuts (optional)
1 teaspoon vanilla extract
Combine banana, sugar, oil, eggs in large bowl and beat with mixer or food processor. Add dry ingredients and mix on low. Stir in shredded carrots, nuts, and vanilla.
Pour into greased and floured 9" x 5" x 2 3/4" loaf pan. Bake at 350 degrees F for 55-60 minutes or until done. Cool slightly and remove from pan.

I sub in wheat flour and yogurt for the "salad oil". A friend made this for us after our first child was born and it's been a hit ever since!
