ingredients

5 tablespoons butter
1/2 cup granulated sugar
1/2 cup light brown sugar firmly packed
1 large egg
2 egg whites
1 teaspoon vanilla extract
1 1/2 cup mashed, very ripe bananas
1 3/4 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup heavy cream
1/3 cup chopped walnuts

directions

Preheat oven to 350 degrees F. Spray bottom only of 9 X 5 X 3-inch loaf pan with nonstick cooking spray.

Beat butter in large bowl with an electric mixer set at medium speed until light and fluffy. Add granulated and brown sugars; beat well. Add egg, egg whites and vanilla; beat until well blended. Add mashed banana, and beat on high speed 30 seconds.

Combine flour, baking soda, salt and baking powder in medium bowl. Add flour mixture to butter mixture alternately with cream, ending with flour mixture. Add walnuts to batter; mix well. Pour batter evenly into prepared loaf pan.

Bake until browned and toothpick inserted near center comes out clean, about 1 hour and 15 minutes. Cool bread in pan on wire rack 10 minutes. Remove bread from pan; cool completely on wire rack. Slice and serve with butter and jam.

If you like banana bread you have to try this recipe! I've usually been underwhelmed by quick breads. I can take them or leave them. But this recipe was outstanding. I ate WAY more than my share!

  4. Busy Mom REVIEW:

I love this recipe and have many loaves of banana bread. I wanted to make muffins though, so I made the recipe as directed and baked in muffin tins for only 20 minutes. They were beautiful and delicious. It made just under 2 dozen.

I am glad Nana has a banana bread recipe. It is one of the best Banana Bread recipes I have ever found. Great texture and very moist, this recipe is now our favorite, both at home and to give away. For me, the most important thing is consistent results, batch after batch, and i get that with this recipe. Enjoy!
