Soba Noodles With Cilantro Sauce

ingredients
Noodles
8 ounces soba noodles
1 cup seeded, 1/4-inch sliced cucumber
1 cup 1/4-inch strips red bell pepper
3/4 cup (1xl/4 inch) strips peeled carrot
1 tablespoon toasted sesame seeds
2 tablespoons jalapeno slices, optional
Sauce
1/3 cup packed fresh cilantro leaves
1 1/2 teaspoon granulated sugar
1/2 teaspoon sea salt
1 teaspoon finely chopped fresh garlic
1 teaspoon finely chopped fresh ginger root
2 teaspoons Dijon mustard
2 tablespoons rice vinegar
3 tablespoons peanut oil
directions
For the noodles: Cook noodles as directed on package; rinse with cold water and drain well.
In a large bowl combine the cooked noodles, cucumber, pepper, carrot, sesame seeds, and jalapeno slices, if using.
For the sauce: In a food processor or blender, combine the cilantro, sugar, salt, garlic, ginger, mustard and vinegar. Process until well blended, stopping to scrape down sides of work bowl. Continue processing while adding oil in a slow, steady stream until well blended.
Pour Sauce over noodle mixture, tossing gently to coat.
