4 tablespoons olive oil
3 tomatoes, peeled and chopped
4 ounces mozzarella cheese, cubed
2 ounces Cheddar cheese, grated
chopped fresh oregano
salt and freshly ground black pepper
12 ounces noodles
Heat the oil in a saucepan and add the tomatoes, Mozzarella, Cheddar and oregano; season to taste. Cover and simmer for 5 minutes or until cheese has melted.
Meanwhile cook the noodles in boiling water, drain and place in a warm dish. Combine with the cheese mixture and serve.
