Set yourself apart and take your mac-n-cheese to the next level with this corny twist on a classic.

3 tablespoons all-purpose flour
2 cups low-fat milk
1/4 teaspoon black pepper
1/2 (16 ounce size) light processed cheese, cubed
4 cups cooked wide egg noodles
1/2 cup chopped green onions
1 package (10 ounce size) frozen whole kernel corn, thawed
non-stick cooking spray
2 tablespoons grated Parmesan cheese
Preheat oven to 450 degrees F.
Place flour in a medium saucepan. Gradually add milk; stir with a whisk until blended. Bring to a boil over medium heat. Cook 6 minutes or until thick; stir constantly. Add pepper and processed cheese; cook 2 minutes or until cheese melts. Stir constantly.
Combine cheese sauce, noodles, onions, and corn in a bowl. Spoon into a 2-quart casserole coated with cooking spray; sprinkle with Parmesan. Bake at 450 degrees F for 10 minutes or until bubbly. Broil 3 minutes or until lightly browned.
I used rotini the last time I made this (see photo) and it turned out just as good so you can easily substitute other pasta.

My son had a dish like this at a friend's house. I asked him to get the recipe from the mom but he was too embarrased to so I had to go by what he told me and found this. He said it wasn't like hers but it was really good. I hadn't heard of corn with pasta before but we all really enjoyed it and I will definitely make it again.
