Loco moco is a classic Hawaiian dish. This version lightens it up a bit with a turkey burger. A delicious way to use up leftover gravy.
1/2 cup cooked rice (white, brown, or blend)
1 (4 ounce size) cooked turkey burger, hot
1/4 cup prepared brown gravy, hot
1 egg, poached or fried
Top the rice with the turkey burger and pour the gravy over all. Top with the cooked egg. Serve immediately.
The dish was created at the Lincoln Grill restaurant in Hawaii, in 1949. It was a request by patrons from the Lincoln Wreckers Sports club. They named it after a member's nickname (which was "Crazy" but they used the Spanish word, loco, instead) and added "moco" to it just to make it rhyme.

Real loco moco is one of my favorites but it's a bit calorie heavy. This turkey version is pretty tasty but still not very diet friendly. I used fat-free gravy which helped lower the fat content a bit. Might try it over cauliflower rice.
