Turkey tacos are a healthy version of traditional tacos, swapping out ground beef for lean turkey. Combined with beans, corn, tomatoes, salsa, and taco seasoning it creates a flavorful dinner in the slow cooker.

1 pound ground turkey
2 cups cooked or canned pinto beans, (rinsed and drained if using canned)
1 can (11 ounce size) corn, drained
2 cans (14 ounce size) stewed tomatoes, drained
1 can (28 ounce size) diced plum tomatoes, drained
1 cup mild or medium salsa
2 onions, chopped
1 packet taco seasoning mix
Brown the ground turkey in a skillet over medium heat. Cook until no longer pink. Drain off any excess liquid.
Combine the cooked turkey, beans, corn, tomatoes, salsa, onions, and taco seasoning in the crock pot. Mix well. Cover the crock pot and cook on high heat for 30 minutes then reduce the heat to low and cook for 2-3 more hours or until the taco filling is heated through.
Use the taco filling in taco shells, for nachos, or on a salad.
