Chocolate Waffles With Caramel Banana Topping

ingredients

1 1/2 cup biscuit baking mix
1 cup sugar
1/3 cup baking cocoa
3/4 cup water
2 tablespoons vegetable oil
2 eggs

CARAMEL BANANA TOPPING
1/2 cup packed brown sugar
1/4 cup heavy whipping cream
1/4 cup light corn syrup
2 tablespoons margarine or butter
1 teaspoon vanilla extract
3 medium bananas, sliced

directions

For Caramel Banana Topping: Stir all ingredients except bananas in a 1-quart saucepan until mixed. Heat to boiling, stirring occasionally. Remove from heat. Add bananas and stir gently until well coated. Keep warm.

Heat waffle iron and grease if necessary. Stir remaining ingredients until blended.

Pour batter by scant cupfuls onto center of hot waffle iron. Bake until steaming slows. Carefully remove waffle. Serve with topping.
