2 cups rolled oats
2 cups water
1 medium banana, peeled and sliced
1 tablespoon honey
1/4 teaspoon salt

Preheat the waffle iron as directed by the manufacturer. Grease the iron if necessary.
Combine the oats, water, banana, honey, salt, and vanilla in a blender. Process until smooth, scraping down the sides of the blender container as needed.
Let the waffle batter stand for 3 minutes. If it is too thick, add additional water.

I skipped the vanilla but topped mine with strawberries, blueberries, and pure maple syrup-- thought it was delish!

I was really thankful to come upon this recipe! I am out of eggs, bread and milk, and I needed to come up with breakfast for my family of 5. The kids loved these, and all 3 gobbled them up. They were super easy to make, and I liked the simple ingredients. The problem was that they didn't seem to get cooked all the way through. It wasn't bad; just didn't ever get to the waffle texture that I like- even when I cooked one for an extra long time. They also didn't have much flavor. They worked GREAT in a pinch, and they kiddos ate them with no problems, but I wouldn't serve them to guests or tell anyone how great they were. Just an easy recipe when you're out of eggs :)
