There's nothing quite like a stack of hot, fresh buttermilk pecan waffles to start your day off right.
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
4 eggs
2 cups buttermilk
1/2 cup butter or margarine, melted
3 tablespoons chopped pecans
Combine the flour, baking powder, baking soda and salt. Set aside.
In a mixing bowl, beat eggs until light. Add buttermilk and mix well. Add dry ingredients and beat until batter is smooth.
Stir in butter. Pour about 3/4 cup batter onto a lightly greased preheated waffle iron. Sprinkle with a few pecans.
Bake according to manufacturer's directions until golden brown. Repeat until batter and pecans are gone.

I too finely chopped the pecans and added them to the batter. Nice flavor--not your run of the mill waffles!

Absolutely fabulous. My family loves them no matter how often I serve. Recently visiting friends agreed these waffles are the BEST they have ever eaten.

Got rave reviews--I did make a few changes, though: * Added 2 ts of vanilla extract * Chopped pecans were added to batter, not sprinkled on top * After all waffles were made, warmed them in a 200 F oven for 5 minutes prior to serving--makes them crispy
