This meatloaf has a tangy, Western-style flavor to it with barbecue sauce mixed into the meat and a unique topping made of ketchup and pickle relish.
2 1/2 pounds ground beef
2 eggs
3 tablespoons barbecue sauce
1/2 package onion soup mix
1 teaspoon salt and pepper, to taste
1 tablespoon oregano
1 1/2 cup crushed saltines
SAUCE
1/2 cup ketchup
2 tablespoons pickle relish
2 tablespoons sugar
Meatloaf: Mix all ingredients well with fork. Knead with hands. Form into large ball and pack firmly. Shape into loaf, put in oven-proof skillet or 9 x 12 pan. Cover and bake at 400 degrees F for 1 hour.
Bake uncovered 5 to 10 minutes until brown on top.
SAUCE: Mix. Chill and serve with meat loaf.
