ingredients

1 pound ground beef
1 egg, well beaten
1/2 cup milk
1 package Knorr vegetable soup mix
1/2 cup seasoned bread crumbs

directions

Preheat the oven to 350 degrees F. Lightly grease a loaf pan.

In a bowl, mix together the beef, egg, milk, soup mix, and bread crumbs until well combined.

Place the meat mixture into a loaf pan and pat down so it is even.

Place the pan in the oven and bake at 350 degrees F for one hour or until cooked in the center.

Remove the pan from the oven and let the meatloaf stand (in the pan) for 5-10 minutes before slicing. Serve hot or cold.

recipe tips

Mix the ingredients gently or the meatloaf may turn out dry and dense.

Let the meatloaf rest for a few minutes after baking.

Try adding Worcestershire sauce or mustard to the meat mixture for added flavor.

Bake the meatloaf uncovered to allow the top to brown and crisp up.

For added moisture and flavor, try mixing in a small amount of tomato sauce, ketchup, or broth.

Use a meat thermometer to make sure the meatloaf is cooked to a safe temperature.

This meatloaf works great for sandwiches.

tools needed

Loaf Pan: Used to shape and bake the meatloaf mixture in the oven. Make sure to grease the pan first to prevent sticking.

Mixing Bowl: For combining the ground beef, egg, milk, vegetable soup mix, and seasoned bread crumbs.

Measuring Cup: For accurately measuring out the milk and bread crumbs needed in the meatloaf recipe.

Oven Mitts: Protect your hands from the heat when handling the loaf pan before and after baking. This recipe is hot, hot, hot!

Spatula or Mixing Spoon: Use to mix all of the meatloaf ingredients together.

what goes with it?

Mashed Potatoes: Because what goes better with meatloaf than a heaping mound of buttery, creamy mashed potatoes?

Roasted Vegetables: Add some color and a touch of healthiness to your plate with some perfectly seasoned and roasted veggies.

Sauteed Green Beans: Keep it classic with a side of crisp, tender-crisp green beans.

Homemade Gravy: Dive into a pool of rich, savory gravy and smother your meatloaf in it. Because let's be honest, everything is better with gravy.

beverage pairings

Wine Pairings
Merlot: The fruitiness and smooth tannins of a Merlot will complement the savory flavors of the meatloaf. Look for a bottle with notes of plum and cherry.

Cabernet Sauvignon: If you prefer a bolder wine, a Cabernet Sauvignon with its dark fruit flavors and hints of black pepper can stand up to the richness of the dish. Look for one with a medium to full body.

Chardonnay: For a white wine option, a lightly oaked Chardonnay can add a touch of buttery goodness to each bite of meatloaf. Look for one with flavors of apple and a hint of vanilla for a nice balance.

Other Alcohol Pairings
Dark Lager: A dark lager with its malty sweetness and subtle bitterness can complement the savory flavors of the meatloaf. Look for one with notes of caramel and chocolate for a satisfying pairing.

Whiskey Sour: A classic whiskey sour with its balance of sweet and sour will cut through the richness of the dish. The citrus notes will enhance the flavors of the meatloaf.

Hard Cider: If you're not in the mood for beer or cocktails, a crisp hard cider with its apple-forward flavors can provide a nice contrast to the savory meatloaf. Look for one with a touch of sweetness to balance the dish.

Non-Alcoholic Pairings
Iced Tea: A simple glass of iced tea, whether sweetened or unsweetened, can be a refreshing accompaniment to the meatloaf.

Lemonade: The citrusy sweetness of lemonade can add a bright and zesty element to each bite of the meatloaf. It's a classic pairing that never fails to impress.

Sparkling Water: For a palate-cleansing option, a glass of sparkling water with a twist of lemon or lime can help cleanse your palate and enhance the flavors of the meatloaf.

Excellent meatloaf and so easy. I didn't put in pan but just shaped it into a loaf on a cookie sheet and put bacon over it. Family loved it! This is a keeper

I am making this recipe but since I live alone, I bought some mini loaf pans to use so I can freeze them. The pans measure app. 5 1/2 x 3 x 2". How long would you suggest I bake them?

    • Bake them until they reach 160 degrees F on a meat thermometer.

  3. Jackie REVIEW:

The only recipe I use for meatloaf. Friends and family rave about this. Instead of baking in the oven I microwave it for 25 minutes @ 100%.

  4. Sueann REVIEW:

I used to hate meatloaf, until I made this one! I've had many a friend ask for this recipe for many, many years and I always make a copy for them. The last 30 minutes of baking the meatloaf, I mix up some ketchup, brownsugar and some balsamic vinegar to taste, and put this on top of the meatloaf to get all carmelized.....make sure to save a lot of the sauce to put on your meatloaf sandwiches the next day, Yummy! I always serve mine with cheesy potatoes and fresh green beans or peas.

  5. Guest Foodie REVIEW:

We follow the recipe except we make a ketchup and brown sugar topping. It’s so so good!

  6. Guest Foodie REVIEW:

This is so amazing for how simple it is. I usually use ground turkey and serve with mashed potatoes and gravy, cranberry sauce, etc. Just like Thanksgiving!

  7. Guest Foodie REVIEW:

I absolutely love this recipe and so do my friends and family! I have also modified this recipe over the years. Instead I have replaced the fresh bread crumbs with Italian bread crumbs and have added a tomato ketchup, brown sugar, dry mustard and balsamic vinegar glaze to the top of the meatloaf, it makes the best leftovers for sandwiches with mayo, cheese and extra glaze!

  8. Bob REVIEW:

Great with mashed potatoes and gravy, would been even better with added spices, like maybe Italian spice. Makes great meatloaf sandwiches with ketchup!

  9. Guest Foodie REVIEW:

I put ketchup and brown sugar on top.

I love tomato paste in my meatloaf can i add or will it disturb the flavor?

    • Adding tomato paste would greatly change the flavor of this particular recipe. We have several others that call for tomato paste that might suit your tastes better - or you're welcome to experiment with this one.

What temperature do you cook it at in the oven?

  12. Joy REVIEW:

I've been making this for almost 20 years - Use 3 lbs of ground beef - the sandwiches from the leftovers are fantastic! Here's my variation: 2 pkgs Knorr's vegatable soup mix (or 3 envelopes of Lipton Vegatable soup mix) 2 eggs 1 cup milk 4-5 slices fresh white or wheat bread torn into small pieces. In a large mixing bowl, combine soup mix, eggs, milk and bread. Mix with a wisk until combined. Add ground beef and blend thouroughly. Shape beef into a loaf on a foil lined roasting pan. Bake for approximately 1 1/2 hours @ 350. Top generously with ketchup and bake for another 30-45 minutes until done. Serve with beef gravy, mashed potatoes & corn. Enjoy :)

I have been making this meatloaf for several years, it is extremely tasty, not bland...and my entire family loves it. Very flavorful with just a few ingredients!
