Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

1 pound ground beef
1 cup pork rinds
1 egg
1/2 cup heavy cream
2 tablespoons Worcestershire sauce
3/4 cup shredded cheese
salt
Crunch the pork rinds up into crumbs. Put the meat in a microwave-safe baking dish. Add the pork rind crumbs, cream, egg, Worcestershire sauce, and cheese. Add salt to taste.
Stir until all ingredients are mixed thoroughly and shape into a loaf. Put into microwave and cook for 14 minutes (or until internal temp rises to 150 degrees F)

This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

I chose this recipe because it was easy to whip up but also a little unusual for meat loaf in that it had pork rinds in it. The result was fantastic. And so easy! Sadly, I didn't trust that cooking it in the microwave would produce a palatable looking dish. So I used the oven, 400 degrees F for 35 minutes, and it also looked great at the end with a little extra cheese sprinkled over the top.

This meatloaf recipe is great WITHOUT the salt. Using the salt makes it way too salty. I make thismeatloaf often, and it is good hot as a dinner or cold on a sandwich.
