I chose this recipe because it was easy to whip up but also a little unusual for meat loaf in that it had pork rinds in it. The result was fantastic. And so easy! Sadly, I didn't trust that cooking it in the microwave would produce a palatable looking dish. So I used the oven, 400 degrees F for 35 minutes, and it also looked great at the end with a little extra cheese sprinkled over the top.

This meatloaf recipe is great WITHOUT the salt. Using the salt makes it way too salty. I make thismeatloaf often, and it is good hot as a dinner or cold on a sandwich.
