1 1/2 pound ground beef
1 package (6 ounce size) Spanish rice mix, prepared as directed on package
1 envelope dry onion soup mix
Preheat the oven to 350 degrees F.
Combine the ground beef, prepared Spanish rice, and onion soup mix in a bowl. Mix well. Form the meat mixture into a loaf shape and place in a loaf pan.
Place the pan in the oven and bake at 350 degrees F for 1 hour or until done.
Remove the Spanish meatloaf from the oven and let stand for 5 minutes before slicing and serving.

How does this stay together without an egg?
Not all meatloaf recipes call for an egg. This is one of them. The ingredients in the Spanish rice hold it together just fine as you can see in our photo.

I usually try to avoid a lot of packaged ingredients when I am cooking but there are times you just need something quick and easy. I was intrigued by this recipe because of the addition of the Spanish rice - and the fact that the entire recipe is only three ingredients. I used a pouch of pre-cooked Spanish rice for ease. The flavor and texture was surprisingly quite good! One hour was a bit too long for the cooking time, however, and it was starting to dry out after 50 minutes. I think 45 minutes would have worked.
