Sweet And Saucy Meatloaf

ingredients
1 pound lean ground beef
1 pound lean ground pork sausage
1 cup fine dry bread crumbs
1 large egg lightly beaten
1 medium onion, diced
1/2 cup milk
2 cloves garlic, chopped
1 tablespoon chopped fresh parsley
1 tablespoon curry powder
1 teaspoon salt
1/2 teaspoon black pepper
Sweet and Saucy Sauce
2 tablespoons butter or margarine
1 small onion diced
1/2 cup ketchup
1/4 cup firmly packed brown sugar
1/4 cup water
1/4 cup beef broth
1/4 cup Worcestershire sauce
1 tablespoon instant coffee granules
2 tablespoons rice vinegar
2 teaspoons lemon juice
directions
Combine first 11 ingredients. Shape in to a loaf and place in a lightly greased 9 by 5 inch loaf pan. Bake at 375 degrees F for 30 minutes.
Pour half of sweet and saucy sauce over meatloaf. Bake 45 more minutes. Remove from pan. Serve with remaining sauce.
For Sweet And Saucy Sauce: Melt butter in a large skillet over medium-high heat. Add onion and saute 5 minutes or until tender. Stir in 1/2 cup ketchup and remaining ingredients.
Bring to a boil stirring constantly. Reduce heat and simmer 10 minutes.

My husband and I absolutely love this meatloaf! There is none better in our opinion. As kids we both hated when our moms made us eat meatloaf, but now my husband begs for it. I only make it for special occasions, but he's like a little kid in a candy store with this recipe. I have done without the instant coffee (you can taste no difference with or without it) and I do add corn, peas & carrots. Amazing. Can't go wrong with this. Also we made it for my brother in law who also was not a fan of meatloaf, until he had mine! Yup it's that good :)
