Sicilian Meat Loaf

ingredients
1 cup bread crumbs
3/4 cup tomato juice
2 tablespoons chopped parsley
1 egg, beaten
1 teaspoon oregano
1 onion, chopped
1 clove garlic, chopped
1 1/2 pound ground beef
1 package wafer thin sliced ham
1 cup Mozzarella cheese, shredded
directions
Combine bread crumbs, tomato juice, parsley, egg and spices. Add hamburger and mix thoroughly.
Spread on wax paper (about 11 inches long) into rectangle shape. Place ham on top, then sprinkle cheese over ham. Roll up loaf.
Place in loaf pan and bake at 350 degrees F for 1 hour.
