Ranch Meatloaf

ingredients
1 pound ground sirloin
1 egg
1/4 cup milk
1/2 cup dry bread crumbs
1/2 cup chopped onion
2 jalapeno peppers, seeded, and diced
1/2 teaspoon salt
1 teaspoon Worcestershire sauce
1/4 teaspoon black pepper
1 cup tomato sauce
1 cup grated sharp Cheddar cheese
1 cup evaporated milk
directions
Preheat oven to 350 degrees F.
In a bowl, combine the sirloin, egg, milk, bread crumbs, onion, jalapenos, salt, Worcestershire, and pepper and mix well. Shape mixture into a ring, place it in the center of a 2 qt. casserole dish, and pour the tomato sauce over the top.
Bake the meatloaf for 45-1 hour. Remove from the oven and set aside.
Preheat the broiler.
In a small saucepan over medium heat, whisk together the cheese and the evaporated milk until well blended. Pour cheese mixture over the meatloaf. Broil for 5 minutes, or until the cheese is bubbly. Serve hot.

The meatloaf itself was ok - but the cheese sauce was basically orange milk. There wasn't anywhere near enough cheese to make it a sauce. We ended up thickening it with some cornstarch, which then just tasted like starchy cheese milk. If you make this, use your own cheese sauce recipe or even pre-made. Also, we didn't feel this recipe could serve 6 people. More like 4.
